Types of Profiteroles: Classic, Gold, White Chocolate and Sour Cherry Pistachio
Short answer: Nazar Profiterol makes five types of profiteroles: the dark-chocolate Classic, the caramel-noted Gold Chocolate, the pistachio-topped White Chocolate, the Sour Cherry & Pistachio with diplomat cream, and the Trio Mix with all three chocolate sauces in one box. Every type uses the same soft choux puffs and milk-cooked pastry cream; the sauce and the size are what set them apart.
This guide walks you through how each profiterole tastes, how many people it serves and when to choose it. If you are curious where the dessert comes from, start with Where Do Profiteroles Come From?
What makes profiterole flavors different?
A profiterole has three parts: choux pastry puffs, the cream inside and the sauce poured on top. At Nazar, the puffs and cream are made fresh every morning at our production kitchen in Şerifali, Istanbul. The real difference is the sauce: the type of Belgian chocolate changes the whole character of the dessert.
Classic Profiterole: dark chocolate, the recipe since 1946
The Classic Profiterole pairs a dark Belgian chocolate sauce with milk-cooked pastry cream and choux puffs. It is the recipe Nazar has been making in Istanbul since 1946, and the best pick if you like a balance of sweet and slightly bitter.
Classic Profiterole sizes
- 220 g: 3–4 puffs, a single serving.
- 750 g: 12 puffs, serves 3–4.
- 1 kg: 16 puffs, serves 4–5.
Gold Chocolate Profiterole: for caramel lovers
The sauce is made with Gold (caramel) Belgian chocolate. According to its maker Callebaut, Gold chocolate is made with caramelised sugar and caramelised milk, with notes of toffee, butter, cream and a touch of salt. If you want something softer than dark chocolate but richer than white, try Gold. It comes as a 220 g single serving and a 600 g box (10 puffs, serves 2–3).
White Chocolate Profiterole with pistachio
A white Belgian chocolate sauce meets the same cream and choux puffs, finished with Antep pistachios. It is milky and mellow, and it looks great next to the dark Classic on a shared table. Available as 220 g and 600 g (10 puffs, serves 2–3).
Sour Cherry & Pistachio Profiterole
This one is a different recipe: diplomat cream, sour cherries, pistachio and chocolate chunks, topped with a marbled sauce. The tart cherry balances the sweetness of the chocolate. Choose a 220 g serving or a 700 g box.
Nazar Trio Mix Profiterole: when you can't decide
The 750 g Trio Mix box brings white, Gold and dark Belgian chocolate sauces together with 12 choux puffs and pastry cream. It serves 3–4, so everyone at the table can find a favorite.
